Pumpkin Apple Overnight Oats

This recipe is the embodiment of Fall in a jar. We have pumpkin, apple, spices, pecans, and maple all swirled together to make the most delicious, filling, and easy Fall morning breakfast. Not only is it packed full of flavor, but you guys, this is packed full of NUTRIENTS. Vitamins, minerals, omega-3’s fatty acids, fiber, protein, antioxidants, you get the point. This is one of those meals where you say, “wow, eating healthy really can be delicious and easy.”

You can prep this breakfast five nights before, the night before, or one hour before you enjoy it. My advice? If you like it as much as I do, prep 4-5 jars at once and enjoy it for breakfast all week long. Now you have one less meal to think about. You’re welcome.

Pumpkin Apple Overnight Oats

1/3 cup oats

1/4 cup plain Greek yogurt

1/3 cup almond milk (or milk of choice)

3 T canned pumpkin

2 t chia seeds

1/2 cup chopped apple (use 1/4 of the apple in the oats, and 1/4 of the apple to top off the oats)

1-2 T chopped pecans (or walnuts, almonds, pumpkin seeds, etc.)

Drizzle of maple syrup

1/2 t pumpkin pie spice

1 T almond butter

Directions:

Place all of the ingredients (except 1/4 of the chopped apple) into a wide mouth mason jar or similar sized container. Mix well with a spoon, making sure to get all the way to the bottom of the jar. Top the mixture with the rest of the chopped apple, cover, and place in the fridge for at least one hour before serving.

Stays good in the fridge for up to a week. Enjoy!
