How many times do you find yourself scrambling around in the morning? You woke up with plenty of time to go through your usual routine, but then all of sudden you realize you have to leave in 15 minutes and you still need to: wake up the kid, change his diaper, clothe him, feed him, feed yourself, pack your bag, take your vitamins, load the car, then hit the road. Now, although us mama’s actually CAN do all of that in 15 minutes, while still only managing to be a few minutes behind schedule…those few minutes are the minutes EVERYBODY AND THEIR MOTHER decided to leave for work that morning and take the same route. So there you are, stuck in traffic, heart rate sky rocketed, finally realizing…you either didn’t get to eat your breakfast or it was a piece of peanut butter toast that is now hard as a rock (and probably face down on the passenger seat).
Although Over Night Oats might not be the complete answer to this hectic morning…let me tell you, it DOES take away the stress of deciding what to make for breakfast that is a) tasty b) quick c) filling and d) can be be prepped the night before!
Let’s get to it:
Over Night Oats
Makes 1 serving | Takes 5 minutes
1/2 cup quick oats
1/2 cup milk of choice (I do unsweetened vanilla almond milk)
1/4 cup plain Greek yogurt
1/2 t cinnamon
2 t chia seeds
2 T chopped nuts (I do walnuts or pecans)
Drizzle of 100% pure maple syrup
Combine all ingredients into the jar and stir well and place in the fridge over night (or for at least 20 minutes). You can top your oats off with your favorite fresh (or frozen) fruit the night before or before eating, along with your favorite nut butter drizzled on top.
NOTES: If you choose not to add yogurt, they will tend to be too dry. Try adding a splash more of milk, plus a splash more in the morning before eating.
