Greekish Salad

Do you ever get sick of salads? Don’t get me wrong, I love me a good salad. It’s such an easy way to load all your veggies in one bowl PLUS the perk of having it on top of a bed of greens? Amazing, fresh, and light. But sometimes…the last thing I want to do is feel like a rabbit, where all I do is eat leaves and carrots.

This is the perfect salad (sans leaves/lettuce/greens) for when you still want to pack in the veggies but also want to feel like you just ate an amazing, fresh, and light meal. Plus, who says you can’t put it on a bed of greens when you DO want to feel like a rabbit?

Greekish Salad

5 Persian cucumbers, sliced and halved

1 pint of cherry tomatoes, halved

1 can of drained and rinsed chickpeas

1/4 red onion, diced

1/2 cup feta cheese

1 avocado, cubed

2-3 T olive oil

Juice of 1/2 a lemon

1 t organo

1/2 t garlic salt

salt & pepper to taste

Directions:

Add all the ingredients into a large mixing bowl. Drizzle with the olive oil and lemon juice.

Seriously…that’s it! Enjoy as a side, or add chicken + quinoa to make a complete meal.
